This is love at first bite! Sweet, juicy buttery bursts with each forkful, its like fireworks going off in your mouth! Caramelized Pineapple makes for the most indulgent of breakfasts or delightful dessert plate for sharing.
A little bit naughty but once in a while hey? I’m mesmerised by this photo of pineapple on fork, its all I can do not to lick the screen! Who remembers that song… “I’m too sexy for this fork”?
So easy and so delicious. All you need is some vegan butter, sugar and a dollop of creme fraiche or yoghurt to serve it with. Swirl it around in a pan for a few minutes and you have this little piece of heaven.
You could go mad and add a sprinkle of cinnamon and mint leaves if you fancy but sometimes less is more.
I’ve used coconut sugar but feel free to use regular brown sugar if you prefer. Theres a whole hoo ha about sugar right now and rightly so… refined white sugar is pretty bad for us since it has no nutritional value, just empty calories AND worse than that it steals nutrients from us in order for us to digest it because all the nutrients have been processed out of it already. Coconut sugar is still high calorie but at least it retains enough minerals for absorption. Its still sugar but its a step up from refined!
There’s really not much else left for me to say so lets just look at that sweet buttery bite one more time….

Sweet Buttery Caramelized Pineapple….. how can you resist?
- 4 tbsp Vegan butter I use Flora
- 1/2 cup Coconut Sugar
- 1 Pineapple, sliced
- Vegan Creme Fraiche to serve I use Oatly or sub with vegan yoghurt
Melt the butter in a pan and add the sugar. Stir for a minute. Don't worry if they remain separated.
Add the pineapple to the pan and cover with the melted butter and sugar. Keep swirling the pan and cook the pineapple for 5 mins on each side or until tender.
Serve up on a plate, pour the sauce on top and add your creme fraiche and any other garnish you like. Enjoy!
