This just blows my mind. In the blender go cashews with a little water, lemon juice and salt and out comes this dreamy vegan sour cream which you can dollop on chillis, in soups, sandwiches, salads or just spoon straight into your mouth.
It is delicious and the only fats in it are essential healthy ones, no artery clogging saturated fats in this deliciousness, slather it freely, don’t hold back! I make half the recipe which is enough for 2 people but usually end up eating the whole lot myself. Last night the blender lid dropped to the floor and Bertie kindly cleaned it. You heard it here… this non-dairy sour cream comes with puppy approval!

Easy Vegan Sour Cream
This should be enough for 4 people and a puppy!
- 1 cup cashews pre-soaked in boiled water for a minimum of 15 mins
- 3/4 cup water
- 2 tbsp lemon juice
- 1 pinch salt
Throw everything into your blender and blend until smooth
THERMOMIX users, I blend for a minute on 7, scrape down and repeat 3 times
Put it in the fridge for 15 mins or so and it will thicken just a little more or just go ahead and use it if you can't wait 🙂
