A packet of frozen berries from the supermarket, some water and fresh mint blended, for about 3 minutes at high speed (to get rid of the pips) and you have this beautiful pink berry smoothie, summer in a glass. It gives you pink lips, or moustache depending how fast you chug it and you feel the cooling mint all the way down. Delightful.
BUT apart from being sweeter than a baby gorilla’s kiss this simple but super smoothie is full of essential fibre and antioxidants to keep you from ageing and help fight inflammation, is anti-cancer and diabetes, packed full of vitamins and improves cardiovascular function. Berries do all that and more which is why you should try and eat at least a handful of them every day.
I used a mixture of raspberries, blackberries, redcurrants and blackcurrants (bought in a bag called ‘Summer Fruits’ from Sainsburys). A big handful of berries and 200-300ml of water for each glass, mint to taste, I think I used about 5 leaves.
Sweet, tart and super refreshing.
