Strawberry Chia jam why did it take me so long to find you?
What an exciting discovery, healthy vegan jam that takes 10 minutes to make and is totally sugar free! The thickening comes entirely from the chia seeds, no sugar required!
Load it on your bread and butter, in your scone with cream, in your yoghurt with a heap of crunchy granola, slather it on your overnight oats or porridge, pancakes or waffles, use it to make a fancy parfait or just put some in your rice pudding! I am just fantasising about all the very many uses for this jam and all the flavours I am going to create with all that frozen fruit I have in my freezer. What a great way to use stuff up!
You can make it from fresh or frozen fruit. It just needs to be a juicy fruit.

Strawberry Chia Jam

- 2 cups strawberries
- 2.5 tbsp chia seeds
- 1 tbsp lemon juice
Put the strawberries into a pan on medium high heat and cook for 10 mins stirring occasionally. As the fruit begins to break down you can mash it with the back of a wooden spoon to the consistency you prefer.
If you're using a thermomix then add the fruit to the mixing bowl and set to 12 minutes at 98 on reverse speed 1. A minute or 2 towards the end of the cooking time change the speed over to regular speed 1 so the fruit gets a bit more mashed up.
At the end of the cooking time remove the pan from the heat and add the chia seeds and lemon juice giving it a good stir.
If you're using a thermomix then add the seeds and lemon juice straight into the mixing bowl and stir for 30 seconds on speed 1.
Transfer the jam to a jar and let it stand for 5-10 minutes then it should be good to go. If you prefer let it cool completely.
Keep it in the fridge for up to a week.
If you must but only if you must, add a splash of maple syrup or syrup of choice to add a touch of sweetness.
