Summer is here in full force, Wimbledons around the corner and nothing says SUMMER and WIMBLEDON more than strawberries! Except maybe STRAWBERRY VEGAN CREAM CHEESE MINT TOAST!
There are many ways to enjoy these delicious and highly nutritious berries. You can make jams, drinks, desserts, throw them in your salad or just pop them straight in your mouth mmmmmm. BUT how about on toast with vegan cream cheese and mint…….? For breakfast!!! How very decadent!
Vegan cream cheese IS a thing and you can buy it from any high street supermarket. In the UK Tesco have a range of vegan cheese in their free from range made from coconut oil and soy. Their soft cheese works like a dream in cheesecakes but thats another post! There are many vegan cheeses in supermarkets and health food shops now. Go sampling and find the ones you like. I’m a fan of violife cheddar slices for meltable cheese and the mediterranean block for a parmesan, halloumi or feta substitute. For cheddar tasting I like Vegusto picante, Sainsburys cheddar and caramelised onion or Tesco cheddar and jalapeño.
Sainsburys have their own dairy free range also but this time I tried Violife which is made from coconut oil – handy if you’re trying to avoid soy. It tastes great, particularly paired with oh so sweet strawberries and fresh mint. For you guys in the US I have seen a good range of vegan cream cheese in Trader Joes and Wholefoods, Tofutti to name one.
I’m not going to insult you with a recipe, just make your toast, gluten free, wholegrain or sourdough preferably, slather it in cream cheese and top with sliced strawberries and some torn up mint leaves.
Go mad and try adding Avocado, black pepper and a drizzle of balsamic instead of mint! Its all good!
If you have any strawberries left over pop them in a jug of water with some of those mint leaves and a bit of cucumber if you have some, keep it chilled for a gorgeous refresher to sip on throughout the day! Chin chin!
