Had some sushi rice in the cupboard saying “eat me” so I did a quick fridge grab for things to go with it, put the rice on to cook and while it was steaming away chopped the other veggies, grabbed the sauerkraut and onion seeds down from the cupboard and knocked up a quick tahini dressing to drizzle all over it. I give you 20 minute Sunshine Sushi Salad Bowl!
Its pretty, fresh, filling and the garlic in the dressing is definately going to keep the vampires away. I was going to add some chickpeas for a little extra fibre and protein but I forgot. Feel free to add some to your bowl of sunshine if you remember. And if you’re looking for your glasses, they’re probably on your head!
Side note: I find the shop bought sauerkraut pretty inedible while the homemade stuff is on another level, so easy and so many ways and flavours to try. Are you ready to make your easy sushi salad bowl?
Sunshine Sushi Salad
I've used what was available in my fridge, feel free to change it up to whats in your fridge.
- 1 cup sushi rice
- 2 beetroots, cooked
- 1 large carrot, peeled and chopped as you like
- 4 inches cucumber sliced
- 4 tbsp sauerkraut
- 1 cup cherry tomatoes
- 1 large avocado, sliced
- 2 handfuls iceberg lettuce
- 1 sprinkle black onion seeds to garnish
- 1/2 cup tahini
- 1/2 a lemon, juiced
- 1 clove garlic
- 1/4 tsp salt
- 90 ml water about 3/8 of a cup
rinse the rice well and put it on to cook. I cooked mine in the Thermomix. I'm putting instructions for both thermomix and stove top cooking below.
stove top rice method put the rice in a pan and cover it with water, you want it just covered by about an inch water, bring to the boil then turn the heat down to low, cover and let it steam away for 12-15 mins. Keep an eye on it in case it needs more boiling water added. It should absorb all the water but not before its cooked properly.
Thermomix rice method: put the rice in the the internal steam basket and 1 litre of water in the mixing bowl, put the lid on and cook for 20 minutes on varoma, speed 4.
while the rice is cooking get all your lovely veggies peeled and sliced as you like.
make your dressing by blending the tahini, lemon juice, salt, garlic and water until its smooth. (I blended in the thermomix for 30 seconds on speed 8).
Once your rice is ready, build your bowl, drizzle with dressing, sprinkle with onion seeds and eat the rainbow. Enjoy!
