I didn’t know how this was going to turn out but just had a vague idea of teaming up some purple colours. I love purple. I love all colours and especially in food since generally the higher the colour the higher the antioxidant value. So somewhere from that idea this magnificent Vegan Cream Cheese & Beetroot Sandwich came about.
Everything was bought off the shelf and was literally a quick throw together for a light mid-week lunch. I did stand for a while trying to choose between the horseradish and black pepper beetroot or chilli but in the end opted for the horseradish. I had already picked out the vegan cream cheese encrusted with peppercorns and knew I had a red cabbage in the fridge back home. Some lovely seeded bread provided the healthy grain to canvas this work of art! For a gluten free option simply use gluten free bread.
I literally COULD NOT WAIT to put all this together and in fact, in my haste to do so and in my absolute wonder of this purple gorgeousness I forgot to load the specially selected watercress and had to kind of cram that in at the end, hence you have some shots with and some shots without.
No matter! I urge you to try this. Its really satisfying, so pretty to look at AND full of antioxidants! Team it up with some delicious red grapes and something green like the forgotten watercress or some rocket and you have added even more nutrients to the mix. If you don’t have a Tesco near you to find this particular brand of cheese just use whatever vegan cream cheese you can find and crush some mixed peppercorns into it. Its a great combination. (If you have a nut allergy be sure to check the cheese is soya or coconut oil based.)
