Pre-vegan my absolute fave dessert was an Eton Mess. I thought I just had to get over it. UNTIL… aquafaba. What a game changer! Strange as it sounds the liquid from a can of chickpeas can be used as an egg replacer (who even thought of trying that?), aquafaba meringue IS a thing, which means…. VEGAN ETON MESS!!
Oh strawberry, creamy, crunchy goodness how I’ve missed you!
So simple to put together once the aquafaba meringue is made. You will need to allow a couple of hours in total for the mixing, baking and cooled meringue to be ready for crumbling and assembling. (Hop over here for the vegan meringue recipe.)
Once you’ve prepared the meringue its a very simple matter of stirring everything together and digging in. Very easy, very delicious and with the genius substitution of coconut yoghurt instead of whipped cream it contains alot less sugar than the cream version. Although, aquafaba whipped cream… If you want to go all out and have the entirely decadent whipped cream version then simply use the meringue recipe and stop at the part where you shape and bake it. Without the baking you have whipped cream! 2 Recipes in 1, loving that!
And yes this is still not the healthiest of desserts due to the refined sugar BUT it is still lot healthier than the artery clogging cholesterol filled dairy version so all in balance AND sometimes a little treat just makes you feel good!

Vegan Eton Mess
A healthier version of this dessert using coconut yoghurt instead of whipped cream adapted from this recipe http://laurencariscooks.com/vegan-eton-mess/
- 500 g coconut yoghurt I used alpro
- 300 g Strawberries, chopped
- 2 cups vegan meringue, crumbled or as much as you like
- a handful mint leaves for garnish optional
Gently mix everything together and serve in bowls or glass jars. Garnish with mint leaves if desired.
