Most of the time we start the day in a rush, grabbing something on the fly BUT then there are those days when you just want a cooked breakfast and not just any old cooked breakfast… For those days, I give you this Vegan Veggie Breakfast!
Bok Choi, mushrooms, spinach, red pepper, baby corn, a little onion and a chilli pepper all thrown together and fried in a little coconut oil. You cold easily add some vegan sausage if you fancy. Very simple, very fast and would be equally delicious as a lunch or supper.
Feel free to mix it up and add whatever veggies you have in the fridge that need using up! Add more chilli if you like the spice or leave it out if you don’t. There are no rules, just a heaping plate of beautiful fresh veggies, full of nutrients and so pretty to look at!
Serve with some delicious Quinoa Bread for the added healthy grains and to mop up your plate with!

Vegan Veggie Breakfast Fry Up
- oil for frying I used coconut
- 1 small red onion chopped
- 1 mild red chilli or fiery if you prefer
- 3-4 Vegan sausages, chopped optional
- 1 pack of baby corn sliced lengthwise and halved
- 1 pack chestnut mushrooms, chopped
- 1 red pepper, chopped
- 1 bok choy, sliced
- 2 handfuls spinach
- salt and pepper to taste
Heat a non stick frying pan and then add the oil.
When the oil is hot add the chilli and onions and fry gently for a couple of minutes until the onion is translucent.
Add in all the remaining veggies (and sausages if using) except the spinach and cook gently for 5 minutes or so or until the veggies are as you like them.
Throw in the spinach, turn the heat to low, put a lid on the pan and allow the spinach to wilt for a couple of minutes.
Season to taste and serve with some lovely bread. Enjoy!
