Do you get stuck in a breakfast rut? I know I do. So easy to do when you wake up and already have a million things to think about. Who’s got time for fancy pantsy breakfast recipes? Is this Papaya Coconut & Lime fruit plate fantsy pantsy? It kinda looks like it but really is a very quick, easy and nutritious breakfast and looks so pretty on the plate.
Squeeze some lime juice over your papaya, split some fresh figs and drizzle with agave syrup if you like, then add some thick and creamy coconut yoghurt. I use Coyo (also delicious in soups for a little creaminess) but any yoghurt you like will do. Finally add a good sprinkle of hemp seeds over your papaya and tuck in!
These unassuming seeds pack a powerful nutritional punch. A superfood containing good amounts of complete plant protein and the right balance of Omega 3s and 6s. Aside from that they taste good and are great sprinkled on fruits, soups, salads, veggies, in smoothies AND make a tasty vegan nut free parmesan for using liberally over your pasta dishes.
I’m not going to insult you with a recipe here. I have used half a papaya with the seeds scraped out and lime juice squeezed over, 2 figs split and drizzled with agave syrup, a good dollop of coconut yoghurt and hemp seeds. Feel free to mix it up with any fruit you like but do use the seeds for those Omega fatty acids.
