This is a quick recipe for delicious Parsley Oil. Really quick and easy to make for drizzling on soups and salads or just dunking your bread into!
Are you ready to make delicious drizzling Parsley Oil?
- 75 g flat leaf parsley
- 125 ml extra virgin olive oil
Bring a pan of water to the boil, add the parsley and blanch for 5-10 seconds. Drain into a colander and rinse under cold water to cool and stop further cooking.
Drain well then squeeze dry in a clean tea towel.
Place in a blender with the olive oil and puree smooth. Pour through a sieve into a clean glass bottle.
Keep in an airtight glass jar or bottle for up to a week.
