Is it pudding or is it breakfast? Should I feel good or guilty? This triple layer breakfast parfait has thrown my body into a state of glorious confusion. I mean theres coffee right there, and the good stuff you might normally expect in a breakfast… oats, nut butter, chia seeds, milk, berries and nana BUT then there’s CHOCOLATE and its a parfait which just sounds rather fancy and so nice to say!
As I dip my long handled spoon in – you can only eat this with a long handled spoon so you reach right down to the bottom of the glass and get a little of everything in each mouthful – I feel rather indulgent. Its enough for 2 but theres only me here so I’ll just have to do deal with it.

A glorious indulgence for any day you feel the need BUT this one comes with ZERO cholesterol and a heap of goodness too… berry and raw cacao antioxidants, slow release energy from the oats, essential fats from the nuts, potassium from the nana, omega 3s, fibre and protein from the chia seeds, ok ok you get it… GUILT FREE INDULGENCE! Oh happy day!
So this will take a bit of advance preparation. Its not long winded, you just need to have frozen some bananas and left the oats and chia seeds in the fridge overnight. You will then have 1 layer to make in the morning and you can put it all together and dig in!
Triple Layer Breakfast Parfait… lets do this!

Triple Layer Breakfast Parfait
1 big serving or enough to share, maybe double up the chia pudding if you're making for 2 people. Remember you need to prep overnight!
Ingredients
- CHIA PUDDING LAYER prepare the night before
- 1 tbsp chia seeds
- 50 ml oat milk
- 1/4 tsp vanilla essence
- 1/2 tsp date syrup
- OVERNIGHT OATS LAYER prepare the night before
- 40 g oats
- 50 ml oat milk
- 4 tbsp plain or coconut yoghurt I use alpro soya
- 1 tsp coffee
- 45 ml (1/8 cup) boiled water
- 1 tbsp date syrup
- 1 tsp maca
- CHOCOLATE N'ICE-CREAM LAYER
- 2 bananas sliced and frozen overnight freeze them the night before
- 1 tbsp cacao heaped
- 1 tbsp nut butter of choice
- 60 ml (1/4 cup) oat milk
- GARNISH
- 1 heap frozen berries of choice
- 1 sprinkling non-dairy choc chips
Instructions

The night before: pop your bananas in the freezer and prepare your chia pudding and overnight oats layers

Combine your chia pudding ingredients in a glass jar, mix well and place in the fridge overnight

Now combine your overnight oats ingredients together, making the coffee with granules and hot water first, mix it all together well and store in the fridge overnight in a tupperware or glass container

Next morning, bounce out of bed if you’ve even slept because you’re so excited for this breakfast!

Take your overnight oats from the fridge and blend until smooth and creamy. Set aside

Take the bananas from the freezer and blendem with the milk, nut butter and raw cacao until smooth

Now its time to build your parfait layer by layer

First place the chia pudding at the bottom

then carefully spoon in your choc ice-cream layer and press down gently

pour your coffee oat cream on top

Lovingly adorn with frozen berries and choc chips

Gaze admiringly at your creation for a fleeting second, take a pic for facebook/instagram, then get busy with that long handled spoon!
