What could be better than Black Bean Hummus? Black Bean Hummus & Celeriac Chips! Add some quinoa bread and you have the quickest, easiest simple snack, supper or finger food thats super healthy whilst feeling a little bit naughty, I mean bread and chips!
But this is far from naughty.. the bread is made from the healthiest grain on the planet and sprinkled with seeds, the hummus is made from black beans, lemon juice, tahini and garlic and the chips… just look at those chips mmmmm. Roasted in a little coconut oil and sprinkled with paprika and salt. So simple, so delicious and so full of nutrients, fibre and protein AND cholesterol free!
I already posted a recipe for Quinoa Bread which you can find here. Since I have been detoxing these last weeks I tweaked that recipe by substituting the agave syrup and nutritional yeast with a little sugar free vegan bouillon powder instead. It works a treat and I’m wondering if next time I can make it with only the quinoa and water. Watch this space!
There is no recipe for the celeriac chips, you just buy a celeriac, peel or chop off the skin, cut into chips and then toss in some melted (flavourless) coconut oil and roast at 190 C for 40 minutes or so turning halfway through.
Both the hummus and quinoa bread are made by throwing all the ingredients in your blender and blitzing. Couldn’t be easier!
Sorry I got a bit mesmerised by that chip there for a moment…. OK back in the room!
