Its also a top tip if you want to save some money since sunflower seeds are a good deal cheaper than cashews… less than a quarter of the price in my locality! Thats quite a saving!
Just a few minutes of your time and a blender and you have a delicious vegan sour cream! Which unlike dairy creams is full of healthy fats rather than the saturated artery clogging kind and is actually good for your heart health, cholesterol, inflammation, is full of anti-oxidants magnesium and a whole host of other good stuff!

Easy, healthy, delicious and nutritious vegan sunflower seed sour cream. Lets do this!
VEGAN SUNFLOWER SEED SOUR CREAM
- 1 cup unroasted sunflower seeds
- 3/4 tsp salt
- 2 tbsp apple cider vinegar
- 200 ml cold water a little under 1 cup
Boil the sunflower seeds in plenty of water for 15 minutes or soak for 2 hours.
Drain and rinse the seeds in cold water.
Add to the blender with the rest of the ingredients and blend to a smooth consistency. (In my thermomix I blended for 1 minute, speed 8, scraped down the sides and then repeated 4 times.)
