I have tried making my own nut milks in the past and though they did taste absolutely creamy delicious it just wasn’t real life for me to be doing on a regular basis. However, on trying a delicious almond milk smoothie in a smoothie bar somewhere across the Atlantic, I was inspired to see if I could recreate something similar. It turns out I can! So here is my Strawberry Almond Milk Smoothie. Its like strawberry milk for adults!
Made from just 5 ingredients and super simple but does involve soaking the almonds overnight. If you eliminate the soaking you will still get a nice smoothie but may find it difficult to digest so don’t be in a rush! Just pop those nuts in the fridge overnight (minimum 8 hours) ready to throw in your blender in the morning. OK if you are really desperate for this smoothie and just cannot wait til tomorrow then quick soak the nuts in just boiled water for 1 hour, keeping covered to retain the heat.
All you will need is a handful each of blanched almonds and strawberries (frozen are fine), some coconut water (you can miss this out if you want to and use water instead) and filtered water. I added a tsp of beetroot powder to mine for extra nutrients, again you’re welcome to miss this out but extra nutrients and you don’t taste the beetroot so why not give it a go?
Throw everything in the blender and blitz for a good few minutes on high speed to get a beautiful creamy strawberry almond milk. Drain it through a nut bag, muslin cloth or if you don’t have either of those use a clean thin dish towel. Simply lay it over a mixing bowl, pour over the almond milk, carefully gather the corners, and lift up. Then squeeze until all of the pink deliciousness is extracted.
Now pour into a glass, get lost in the delicate pink dreaminess of it all for a while and then take a sip.
Super creamy smoothie with healthy fats in abundance, protein, fibre, ZERO cholesterol and the sweetness and power of the beets and berries. Yes Please!
You could cheat and use store bought almond milk but it won’t taste anywhere as good as if you make your own!

Strawberry Almond Milk Smoothie
- 1 cup blanched almonds soaked overnight or see method for quick soak method
- 1 cup strawberries fresh or frozen
- 2 cups coconut water or use filtered water
- 1 cup filtered water
- 1 tsp beetroot powder
Pre soak the almonds for 8-12 hours or preferably over night. Or quick soak them for 1 hour in just boiled water, covered to retain the heat.
Place everything in your blender and blitz for 2 minutes or so until creamy and smooth.
Strain through a nut bag or muslin cloth. If you don't have either of those use a clean thin tea towel. simply lay a clean thin tea towel over a mixing bowl, pour over the milk, carefully gather the corners, and lift up. Then squeeze until all of the pink deliciousness is extracted.
Pour into a glass and enjoy!
