When taking the first few steps towards a vegan diet, sandwiches can be quite perplexing. I mean you’ve spent a lifetime making tried and tested faves. You know what your ‘go to’ sarnie is and it generally involves meat and dairy or both. So where do you start to replace that with a vegan sandwich? I mean what do vegans put in a sandwich anyway right?
That in mind, here are a few suggestions to get your imagination started. First up and in the picture above is Mediterranean Tofu on Sourdough. No marinading required, simply buy the tofu in the pic above, open the pack and slice it up. Simples. If you think you don’t like tofu this might just change your mind, infused with olives, basil and tomato flavours it is D E L I C I O U S! Add some layers of vegan mayo, avocado and rocket and you have one yummy and easy to put together new ‘go to’ sandwich. The tofu and mayo are available in health food stores, certain supermarkets, Waitrose being one and online vegan supermarkets. If you can’t find the vegenaise mayo (again look in health food stores, supermarkets or online supermarkets) then look for hellmans vegan mayo on the shelves alongside their traditional offerings.
Next up is another simple, quick, easy and delicious Red Radish, Cream Cheese and Sauerkraut with Rocket (arugula) Sandwich on Sourdough. You can buy ready made sauerkraut but I recommend making your own. Its very simple, takes minutes to make and tastes good unlike pretty much all the store bought ones I have tried. I have a recipe right here. The cream cheese is from Tesco’s Free From range, they call it soft cheese. Violife also makes a decent cream cheese and can be found in most supermarkets. The mix of textures and flavours of this sandwich are a real mouth watering treat.
Moving on to a selection of wraps now. First up is this simple and oh so tasty vegan mayo, rocket (arugula) and Oumph “The Chunk” wrap. This soy based chicken alternative is available from the frozen section of most supermarkets and crisps up beautifully fried with spices for a few minutes. I used a jerk lime spice blend but you could use anything that takes your fancy. The supermarkets have a great selection of ready made spice blends. My omnivore partner LOVED this, as did I. So much so we bought more and made…..
The Oumph “The Chunk”, mango salsa, lambs lettuce, coriander leaf and avocado wrap. The mango salsa is simply fresh mango and cucumber cubed and mixed with coriander leaves, finely chopped red onion, chilli flakes and fresh lime juice. I crisped up the chunks in the same jerk lime spice blend as previously. My mouths watering just thinking about this triumph and all the many ways to use this amazing Oumph product.
Finally we get to the sublime Falafel, hummus, sugar free beetroot ketchup, red cabbage and micro greens wrap. So much goodness and nutrients in this beauty! The recipe for beetroot ketchup is here. The falafels are ready made by Cauldron and can be found in most supermarkets. Just layer the hummus and ketchup, crumble the falafels and finish with the chopped red cabbage and greens. Yum!
