Parsley Oil

  • 75 g flat leaf parsley
  • 125 ml extra virgin olive oil


  1. Bring a pan of water to the boil, add the parsley and blanch for 5-10 seconds. Drain into a colander and rinse under cold water to cool and stop further cooking.
  2. Drain well then squeeze dry in a clean tea towel.

  3. Place in a blender with the olive oil and puree smooth. Pour through a sieve into a clean glass bottle.

Recipe Notes

Keep in an airtight glass jar or bottle for up to a week.
